Cedar plank grilling

The other day when we were at HEB, our favorite grocery store and buying fish, they were having a sale where if you bought fish they would also give you a cedar plank for grilling. "Sounds good to me," I said. Tonight I tried it with Steel Head Trout for dinner. I soaked the plank for about thirty minutes and put it on the grill for a few minutes before adding the fish. We used Cooper's dry rub and let it smoke/cook for about fifteen minutes till flaky. Not me - the fish. It was great and very will smoked and quite moist. I had thought it would be dry and was glad to be wrong. Try it and you should like this delectable way to cook fish. Happy travels.
